- Spray foil with a non stick cooking spray.
- Place cut carrots on foil.
- Sprinkle with olive oil.
- Mix lemon juice, butter, sugar and thyme.
- Pour over carrots, fold foil to make a packet.
- Place over medium heat on the grill.
- Cook for 10-15 minutes, just until the carrots are crisp tender.
- Open packet and stir occasionally and check for doneess.
- Garnish with lemon zest if desired.
- Serve immediately.
